If you want to make something creative and tasty for your Christmas meal this year, try your hand at these delicious Garlic Prawn and Cucumber appetizers. They aren’t too difficult to make yet add a stylish touch to the meal.

½ kg prawns, peeled
4 garlic cloves finely diced
1 tsp paprika
¼ tsp cayenne pepper
½ tsp salt
¼ tsp black pepper
Olive Oil
Unsalted butter
¼ cup dry white wine
2 tbsp lemon juice
1 Cucumber Sliced
Method
Dry Prawns with a paper towel, before placing in mixing bowl. Add 1 tbsp of olive oil, the garlic, black pepper and cayenne pepper. Gently toss and allow to marinate for 15 – 20 minutes. As you’re about to cook the prawns – toss salt through the mixture.
Cook in two batches. Heat ½ tbsp oil and 1 tbsp butter in a pan per batch. Once butter is melted, cook for one minute on each side until the prawn is a light golden colour. Repeat for second batch. Then, add first batch back to the pan, add the wine and stir until the wine has mostly evaporated.
Add another tbsp of butter and lemon juice. Allow butter to melt, then stir for half a minute and remove from stove.
Place individual prawns on a cucumber slice and serve.
