Heavenly Burgers – Father’s Day Recipes

Makes 4 Burgers

Burger Patty Ingredients

500g minced beef

salt and pepper (to season)

1 brown onion finely chopped

2 x garlic cloves, minced

3/4 cup of breadcrumbs

1 egg (lightly whisked)

1 tbsp Italian Herbs

2 tbsp BBQ sauce

Other Ingredients

2 tbsp olive oil

Cheddar cheese, thinly sliced

4 hamburger buns, halved

Lettuce

Tomatoes, sliced

Spanish onions, sliced

Sliced Pickles

Mayonnaise

Method

Slightly brown the onion and garlic in a medium pan with some oil. Add to the other burger patty ingredients in a bowl. Combine. Divide the mix into four equal portions. Create patties that are about 10 cm wide and 1.5 cm thick. Rest the patties for 30 minutes on a lined tray covered in plastic wrap in the fridge for 30 minutes before cooking.

Heat 1 tbsp oil in a large non-stick frying pan over medium heat. Cook the patties for about 4 minutes each side or until they are browned and cooked through. Place cheese on top of the cooked side of the patty as you’re waiting for the other side to cook to melt the cheese.

Toast the inside of the hamburger buns under the oven grill for 1 minute or until golden and serve with whatever salad and condiments you like.

Pancakes with Strawberries and More – Father’s Day Recipes

Makes 18 Pancakes

Ingredients

2 cups plain flour

3 tsp baking powder

1 tsp salt

¼ cup sugar

1 egg

2 cups milk

¼ cup butter melted (for serving) – You’ll need extra for cooking

Punnet of strawberries

Maple Syrup

Method

Whisk the egg and milk together. Combine all your dry ingredients in a bowl. Mix. Create a well in the centre of the dry ingredients to pour your milk mixture into. Beat together until all ingredients are combined and the batter is almost smooth (do not over mix).

Pour batter onto preheated greased frypan (electric or on stove). Use medium heat. You can use a 1/4 cup measure of batter for each pancake. You’ll know the pancake is ready to turn when bubbles break on the surface.

Once the pancakes are cooked. Serve hot with butter, maple syrup and strawberries.

Matthew’s Tip

Other toppings can be lemon juice and sugar or cinnamon sugar (tastes like a cinnamon donut).

Homemade Apple Pie – Local Produce Recipes

Homemade Apple Pie

Pastry Ingredients

2 cups self-raising flour

150g butter

4 Tbsp ice water

1 tsp salt

2 Tbsp sugar

1 egg, beaten

Filling Ingredients

8 apples, peeled, chopped ¾ cup water2 ½ Tbsp sugar 1 ½ Tbsp lemon juice 1 tsp cinnamon

Method

Mix sugar and salt in a bowl, then add in the butter and flour. Use a fork (or food processor) to mix until lumps are no bigger than pea size.

Add the egg and water until dough is moist and sticks together. It should still be crumbly. Cover and place it in the fridge for an hour.

Place all filling ingredients into a medium-sized pot and bring to the boil, before simmering until cooked. Remove from heat.

Roll half of the pastry dough out into a circle and put in the bottom of the dish – it needs to cover the inside edges of the dish too. Pour filling on top of your base.

Cover the filling with another layer of dough.

Bake at 180 degrees for 45-60 minutes (until brown). Then enjoy the apple pie!

No Oven Pizza – Next-Level Campfire Cooking

Camping is a favourite family tradition in North Queensland. No matter the season up here, it’s perfect weather to gather up the tent or clean the caravan, relocate all the camping gear and prepare for days of relaxation and fun in the great outdoors. Sometimes, what can make or break a camping trip is the food! We know how hard it can be to prepare and cook good meals when camping (we’ve been there), and as much as we love the old favourites, we also love variety. So, why not try out this no oven pizza? It’s not difficult to make and is still soooo tasty! 

No Oven Pizza

Replace the oven for a pan with this awesome and easy recipe. Simply buy pizza bases, the toppings of your choice, then cook it in a pan over whatever stove or fire you have! It will be so tasty, plus pizza makes a great interactive meal for the family.

Ingredients:

Store-bought pizza bases, depending on how many pizzas you want to make

Tomato paste – make sure to buy enough to lightly cover the entirety of each pizza base that you use

Oil spray

Topping options:

Grated cheese

Chopped mushrooms

Pepperoni

Ham

Chicken

Tomatoes

Capsicum (any colour!)

Canned pineapple

Olives

Onion (brown, red, green)

Sausage

Bacon

When buying the toppings, take into account how much you will need for each pizza that you plan on making.

Method:

When making the pizzas, put on as many toppings as you would like and combine them in whatever ways you choose – there are no rules when it comes to making your own special, camp-made pizzas!

Spray a medium to large pan lightly with oil spray. You can place the pizza base on the pan before heating and then add the toppings while the pan heats up. Or, you can put the pizza, made with toppings, onto the hot pan.

Cook until the bottom is firm and browned, the cheese has melted and the rest of the toppings are cooked through.

Alternatively, pre cook the toppings that you choose so that they only need to be heated through once on top of the pizza. This can help avoid a burnt or overly crunchy pizza base.

Tip: pre-chop all your toppings at home before heading out camping.

Smores – Next-Level Campfire Cooking

Sometimes, what can make or break a camping trip is the food! We know how hard it can be to prepare and cook good meals when camping (we’ve been there). Try out these traditional smores – trust us they’re delicious!

Smores

Smores are a traditional and delicious sweet treat to have while camping that the kids will love. You really only need a few basic ingredients – roasted marshmallows, pieces of chocolate, and biscuits. Plus, don’t forget the night time campfire to enjoy eating them around! It’s a must have.

Ingredients:

280g white and pink marshmallows

400g McVitie’s original digestive biscuits or similar

150g – 250g chocolate (try and find chocolate that is thin and in large squares – ‘Lindt’ is a good brand to try).

Alternatively, you could use Nutella spread to replace the chocolate pieces.

Method:

Melt the marshmallows slightly by using the heat of a campfire. You can buy poles suitable for melting marshmallows over a fire at camping stores or you could go old school and find ‘the perfect stick’ around your campsite.

Place the toasted marshmallow onto a cracker and add a square piece of chocolate on top, then complete the creation by adding another cracker on top of that.

If you want, wrap the smores in tin foil as you go. This can help to keep them warm and give the chocolate inside each one more time to melt. Otherwise, eat as you go!

Tip: You can also buy digestive biscuits that are coated in chocolate – this provides two ingredients in one!

Scrambled Eggs With Veg – Next-Level Campfire Cooking

Sometimes, what can make or break a camping trip is the food! We know how hard it can be to prepare and cook good meals when camping (we’ve been there), and as much as we love the old favourites, we also love variety. Eggs are versatile, basic and yet taste so good. You can boil them, fry them, and more when camping, just as you would at home. But why not turn them into a full meal instead by mixing the veggies right in to make our scrambled eggs with veg recipe? Get your ingredients ready to whip up an uncomplicated, quick, and healthy dish. Feel free to add in or take out whatever vegetables you desire! 

Ingredients:

6 – 12 eggs

1/3 cup milk

1 large tomato, sliced

4 large mushrooms, chopped

1/3 red capsicum, chopped finely

1/3 green capsicum, chopped finely

OR 1/3 brown onion, chopped finely

Oil spray or 1 Tbsp butter

Salt and pepper

Optional: serve on toasted bread

Method:

In a bowl, mix the eggs until the mixture is smoothly blended. Stir in the milk.

Heat a pan and melt the butter (or spray on the oil). Stir in the egg mixture as well as all of the chopped vegetables. Cook until eggs are no longer running.

If you prefer well-cooked or fried vegetables, you can fry or boil them before you stir them into the eggs. 

Tip: Fry brown onion and mushrooms together in butter until browned first (they take the longest to cook). Then add other ingredients.
