Peanut Butter and Cacao Bliss Balls


¾ cup of almonds
2 tbsp of peanut butter
2 tsp of honey
1 tbsp of maple syrup
14 fresh or dried pitted dates
1 tsp of vanilla bean paste or powder
1 tbsp of cacao powder


Add the almonds into a food processor or Thermomix and mill for eight seconds on the highest speed.
Add all other ingredients, and process for 15 seconds. Check the consistency and scrape down the sides of the bowl and repeat if necessary.
It’s a fine mix, but binds well once you get a tablespoon of the mixture and roll into balls.
Store in an air tight container in the fridge and enjoy these healthy, sweet and full flavoured bliss balls any time of day. Almonds can be replaced with even amounts of pepitas, chia and sunflower seeds, and peanut butter can be replaced with tahini for a nut-free version.
