Macadamia and Cranberry Bites

The details:

  • 16 balls or 24-36 bites
  • Keeps up to two to three weeks in the refrigerator

 

Ingredients:

  • 1 cup almond meal
  • ½ cup desiccated coconut
  • ½ cup macadamia nuts
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/3 cup natural pistachios
  • 1/3 cup cranberries

 

Method:

  1. Place all ingredients into a food processor and blend until mixture is well combined and sticking together
  2. Using a tablespoon as a measure, rolls mixture into balls

 

Super Secrets:

Optional = roll balls in salted finely chopped pistachio nuts for a different finish
